
Cucumber Chive Dip

This dip really is quite as simple as it sounds but absolutely divine.
I created the dip while trying to make a traditional Tzatziki, to go with the meatball taco’s, however, when I opened the fridge I was missing 2 of the key ingredients, which of course were garlic and mint.
While rummaging around for something other than boring mayo and ketchup I stumbled across some slightly floppy chives that needed to be used before they shrivelled up. So decided to use these to create a similar style dip.
With a simple change of a couple of ingredients, it gave the dip a completely different flavour but just as fresh and creamy and delicious.
So here’s the recipe;
Ingredients
Cucumber 1/2
Chives 1/2 30g pack
Greek yoghurt 6 Tbsp
salt 1 Tsp
Pepper 1/2 Tsp
Method
Grate the cucumber. on the coarse side of the grater.
Once grated, Drain the water from the cucumber. put the grated cucumber into a cheesecloth or tea towel and squeeze to drain the water.
Tip into a bowl.
Finely chop the chive and add to the cucumber.
Add the salt and pepper
Then add the Yoghurt and mix thoroughty
and serve – Try in a pitta with these 3 Bean Falafel
