Salmon, Soy, Ginger and Lime – Tagliatelle

This recipe is super simple and healthy, it will feel like it’s cheating.
Salmon is an essential addition to your body’s fuel as it’s packed with Omega3 fatty acids, High in B vitamins, potassium and Selenium.
It’s a real superfood, benefitting brainpower, It’s known to help ease anxiety, reduce inflammation and lower blood pressure to name a few.

Fresh ginger which is a well know anti-inflammatory, good for digestion and menstrual pain and build up the immune system.

All these health benefits combined with its simple construction, this dish really is a total winner.

Ingredients

Tagliatelli – 57 g serving is 3/4 cup of dried pasta
Salmon – 2 fillets
Fresh Ginger – Thumb size, Grated
Light Soy Sauce 2 TBSP
Lime
Zest and Juice of 1 lime
Olive Oil -2tsp
Salt and Pepper – to taste

First mix up the marinade. which is as simple as mixing all ingredients except the pasta and salmon in a dish,
If your marinating and cooking alter use a dish big enough to get your salmon in)

Add the Salmon to the Marinade, You can prepare this beforehand and leave to a marinade. I do it the night before or in the morning. but It is perfectly fine to just throw it all in the pan at the stage.

When you’re ready to cook. Add the pasta to a pan of boiling water with a pinch of salt. and cook per the instructions on the pack.

Add the Salmon Skin side down and marinade mixture to a non-stick frying pan. cook for around 5 minutes on each side depending on the thickness of your Fillet.

Before it is completely cooked remove the skin if it comes off easily you can uually do it in the pan, but if it easier take the fillet from the pan remove the skin and return to the pn , reapeat with the second fillet .

once the skin has been removed both fillets have been returned to the pan break the fish into small chunks. mix it up with the sauce still in the pan.

cook until all the pink bit has gone and the fish is cooked through, keep an eye on it, you don’t want to overcook or it will begin to taste dry.

When the pasta is cooked drain and add to the fish squeeze on a little lime Juice and serve alongside some Rocket dressed in sweet chilli sauce or balsamic vinegar
